Mushroom And Tuna Couscous

Ingredients

Half a (110g) sachet of tomato flavoured couscous
100g cherry tomatoes, halved
2 spring onions, sliced
50g cucumber, chopped
100g button mushrooms, sliced
1 (80g) can tuna in spring water, drained
2 tbsp virtually fat free dressing

Method

Place half the sachet of couscous in a bowl, add 100ml boiling water stir well and leave to soak for 10 mins or according to packet instructions.

Prepare the remaining ingredients and stir into the warm couscous. Season to taste. Spoon into a portable container and chill until required.

This can be made the night before ready to take to work the next day.
