Mushrooms á la Greque

Ingredients

3 tbsp olive oil

1 large onion, chopped

1 clove garlic, crushed

225g/8oz button mushrooms

150ml/1/4pt dry white wine

1 (400g) can chopped tomatoes

salt and freshly ground black pepper

45ml/3tbsp chopped flat parsle

Method

Heat the oil in a medium frying pan, add the onion and sauté for 3-4mins or until pale golden. Add the garlic and mushrooms and sauté for one more minute.

Add the white wine and tomatoes and season well with salt and pepper. Bring to the boil, simmer for 5mins until the sauce has thickened slightly. Remove from the heat and cool slightly. Adjust the seasoning as necessary. Stir in the parsley and serve warm or cold with olives and crusty bread.
