Monday's New Fast Food

Actress Tamzin Outhwaite, TV weather presenter Clare Nasir and food writer Alastair Hendy all have one thing in common - they love mushrooms. And they are giving their support to a new campaign, “Mushroom Mondays,” encouraging consumers to start the week with a quick healthy mushroom dish.

To inspire people to get creative in the kitchen, they have agreed to share their favourite mushroom recipe with the nation. So this Monday whether it is Tamzin’s Creamy Mushroom Stroganoff , Clare’s Shiitake and Tiger Prawn Soup, or Alastair’s Pan Grilled Mushrooms with Sea Salt and Garlic Toasts, get cooking with mushrooms.

Packed full of B vitamins and essential minerals potassium, selenium, copper and phosphorous, they are one of our best-loved superfoods. What is more, they taste delicious and are incredibly versatile. Mushrooms are low in energy, fat and sodium, whilst high in water and fibre - they make a filling and satisfying ingredient or meal in their own right. They have a glycaemic index (GI) so low that it can't even be measured and count towards one of our 5-A-DAY, keeping us healthy and feeling virtuous.

New research has revealed that they are the prime natural source of the powerful antioxidant L-Ergothioneine which scavenges free radicals and protects the body’s DNA from damage. Pennsylvania State University found that just a handful of white button mushrooms contain more useful antioxidants than green beans, tomatoes and carrots.
